This can be used with fruit to make pies or used as a filling for Danish pastries, croissants, and coffeecake. As a tart filling, it can also be used simply. Each component is used in an equal amount if you weigh your ingredients.

Ingredients

  1. ½ cup almond paste
  2. ½ cup butter, softened
  3. ½ cup beaten egg
  4. ½ cup white sugar
  5. 1 cup all-purpose flour

Instructions

  1. In a medium bowl, mix together the almond paste, sugar and butter until smooth. Gradually mix in the eggs, and then the flour until well blended. Store in the refrigerator until ready to use.

I had some almond paste that was about to reach expiration date. so, I decided to make little almond pastries. Instead of making my usual Frangipane that uses ground almond I picked to try this recipe to use up the almond paste. This Frangipane has very little almond flavor. The amount of four sounded like a lot but I went ahead and followed the recipe exactly ! After the deceiving taste, I went back to check the Frangipane recipe that I usually use for “Galette des rois” and it only calls for couple of spoons of flour ! I had to cover my pastries with sliced almond to enhance little bit the almond flavor
