Ingredients

  1. 1 cup sweetened red bean paste
  2. 1 cup glutinous rice flour
  3. 1 teaspoon green tea powder (matcha)
  4. 1 cup water
  5. ¼ cup white sugar
  6. ½ cup cornstarch, for rolling out the dough

Instructions

  1. Gather all ingredients.

  3. Wrap red bean paste in aluminum foil and place in the freezer until solid, at least 1 hour.

  5. Mix glutinous rice flour and green tea powder thoroughly in a microwave-safe bowl.

  7. Stir in water, then sugar; mix until smooth.

  9. Cover the bowl with plastic wrap and microwave for 3 minutes 30 seconds.
  10. Meanwhile, remove red bean paste from the freezer and divide into 8 equal balls. Set aside.

  12. Remove rice flour mixture from the microwave. Stir and heat, covered, for another 15 to 30 seconds.

  14. Dust a work surface with cornstarch. Roll about 2 tablespoons of hot rice flour mixture into a ball. Flatten the ball and place one ball of frozen red bean paste in the center. Pinch and press the dough around the bean paste until completely covered.

  16. Sprinkle with additional cornstarch and place mochi, seam-side down, in a paper muffin liner to prevent sticking.

  18. Repeat Step 6 to make remaining mochi.

Modified the recipe slightly for more matcha and vanilla, microwaved, and it came out like this. Awful, and wasted matcha.

Really good. I used almond paste I had leftover from some bear claws as I did not have red beans on hand and it was very tasty. The possibilities are endless. The hardest part is just the tedious work of rolling. I used a little water on my finger tip (use food gloves btw!) to seal the bottom then rolled again in cornstarch for a neat flat ball. I can’t wait to try with more fillings!

Try Stiring batter until its fluffy then Microvae for 3.5 minutes, but take the bowl out and stir thouroughly every minute until the time it up 🙂

It’s very easy to follow and simple. Haven’t tasted the results yet. But I do suggest heating just the water up first before adding it all together makes easier to mix and mold with hands and that way suggest only 3 minutes in microwave.

I liked this as a means to fix my craving, but overall I’m not impressed. The rice flour was quite granular and powdery. Instead of warm water, I put hotter water, and added half a cup of sugar and half a teaspoon of extra matcha prior to microwaving. I think this adjustment helped but overall this doesn’t stretch as well as store bought mochi, and it’s texture is definitely not as smooth.

My matcha powder did not make the mochi as green as I’d wanted – rather, it was a sicky greyish tinge. Perhaps a bit of food coloring would make it better. I’d consider myself a beginner chef, and I found the recipe easy to follow. Tasted great! Thanks so much!

Surprisingly easy recipe! I followed the direction exactly. Next time I will reduce the amount of water . The Mochi came out too soft for my taste, but my family loved it!

The mochi tasted awesome! It was just as good as the store bought kind and cheaper. Also the recipe was super easy to make. My one pointer is to make sure the red bean paste to dough proportion is correct because if it’s not even the red bean paste makes the mochi way too sweet. Other than that delicious!

Great! I worked well. I made little blobs of red bean paste squeezed out of the bag onto foil and froze only for 15 minutes. I would probably up the sugar to 1/3 of a cup to sweeten a bit more. Will definitely make again!
