Easy and Spicy Thai Basil Chicken with Egg

Family favorite that always sells out first at bake sales. Warm caramel filling in the middle makes these cookies velvety and fudgy. Warm food is ideal.

Ingredients

  1. cooking spray
  2. 2 eggs
  3. 1 ½ cups cooked white rice
  4. 2 Thai chile peppers, or more to taste
  5. 2 cloves garlic, peeled, or more to taste
  6. 1 chicken breast half, cut into bite-size pieces
  7. 2 tablespoons soy sauce
  8. 2 tablespoons oyster sauce
  9. 1 teaspoon white sugar
  10. 14 leaves Thai basil

Instructions

  1. Coat a skillet with cooking spray and place over medium heat; cook and stir eggs until scrambled and set, about 5 minutes. Divide rice between 2 bowls and add eggs to rice.
  2. Grind Thai chile peppers and garlic together with a mortar and pestle or in a food processor.
  3. Coat skillet with cooking spray and heat over medium-high heat; cook and stir pepper-garlic mixture until fragrant and garlic is golden brown, about 1 minute. Add chicken; cook and stir until chicken is about halfway-cooked, about 3 minutes.
  4. Mix soy sauce, oyster sauce, and sugar into chicken; cook and stir until chicken is no longer pink in the center, about 3 minutes more. Add basil and stir for 10 seconds. Remove skillet from heat and continue stirring mixture until basil is wilted; spoon over rice and egg.
  5. If the sauce seems too thick in the pan, you can add a little water while cooking.

This recipe is very simple and flavourful. I did cook my eggs over medium though. The runny yolks make the rice creamy and delicious. I also added a bit of smoked paprika and ginger paste to my rice. Just personal preference.

Excellent! I used Serrano peppers and regular basil (need the big leaves IMO) also served with over easy egg. We all loved it! If you used the ready made rice in a bag (we like the Jasmine rice) it is really a simple meal!

I made this with Serrano peppers and regular basil, as others had mentioned. I also added hoisin sauce to the sauce mix because I didn’t have oyster sauce. It was very yummy!

Oh my gosh…so very good! I couldn’t find Thai chile peppers so ended up using serrano peppers, but good all the same. The entire family loved this dish…so flavorful and delicious!

I submitted the orginal recipe and it was changed slightly by the All Recipes staff. Everything is accurate, except that when we serve this we serve it with an over easy egg rather than scrambled. The yolk from the egg is absolutely amazing as it soaks in to the rice and meat. I hope you enjoy the recipe!

Couldn’t find either Thai peppers or Thai basil, so I used serrano peppers and regular basil. This was so full of flavor and so darn easy to make I simply couldn’t believe it. I did use low-sodium soy sauce, but there still may be some folks who think it’s too salty (not us!). Next time, I’ll probably add a little grated carrot to the rice to give it a pop of color, but we really enjoyed this. Garnished with some chopped peanuts and would add them again!
