Diri ak Djon Djon (Haitian Black Mushroom Rice)

It was mentioned last week at work that it had been a year since Taco Bell® removed the Triple Layer Nachos off their menu and that many missed them. This is the result of the mission I undertook. It’s even simpler to cook this at home because the restaurant chain sells their own brand of refried beans, queso, and sauce. Four pans will become dirty, but it’s so worth it!

Ingredients

  1. 1 cup canola oil
  2. 1 Scotch bonnet chile pepper, chopped
  3. 2 cubes black mushroom-flavored bouillon (such as Maggi® Djon Djon)
  4. 1 cube chicken bouillon (such as Maggi®)
  5. 1 cube seasoning bouillon (such as Maggi®)
  6. 2 tablespoons crushed red pepper
  7. 2 tablespoons onion powder
  8. 2 tablespoons kosher salt
  9. 2 tablespoons ground black pepper
  10. 1 tablespoon ground thyme
  11. 3 tablespoons minced garlic
  12. 2 cups frozen lima beans
  13. 2 (14 ounce) cans coconut milk
  14. 6 cups water
  15. 3 cups uncooked jasmine rice

Instructions

  1. Heat oil in a large pot over medium heat. Add Scotch bonnet pepper, bouillon cubes, red pepper, onion powder, kosher salt, black pepper, and thyme; cook and stir until cubes dissolve. Add garlic and saute for another 4 minutes. Turn up heat to medium-high; stir in lima beans and cook for 4 minutes. Pour in coconut milk and bring to a boil; stir until mixture turns black.
  2. Meanwhile, bring water to a boil in another pot. Stir in rice and let boil for about 10 minutes. Turn heat down to medium and mix in coconut milk mixture; cook for about 7 minutes more. Reduce heat to low.
  3. Place a clean dishcloth over the pot. Put a lid over the top and allow to steam for at least 15 to 20 minutes. Uncover and serve.
  4. You can use a habanero pepper instead of a Scotch bonnet.
  5. Use 1/2 of an onion, chopped, instead of powder, if preferred.
  6. Use 3 sprigs fresh thyme instead of dried, if preferred.
