Chipotle Turkey Tacos

The color and flavor of this yogurt made from beets are stunning. I enjoy beet yogurt as a side dish or beets cooked slightly sweeter as a dessert. In Persian cuisine, this is referred to as “Mast-o-laboo.”

Ingredients

  1. 6 chipotle peppers in adobo sauce
  2. 2 tablespoons olive oil
  3. 2 cloves garlic, minced
  4. 1 ½ pounds ground turkey
  5. 10 pineapple chunks in juice, drained, juice reserved
  6. ½ onion, chopped
  7. 1 (1.25 ounce) package taco seasoning
  8. 1 tablespoon water, or as needed
  9. 6 (6 inch) flour tortillas
  10. 2 teaspoons chopped fresh cilantro

Instructions

  1. Remove chipotle peppers from sauce and slice into thin strips; keep adobo sauce for later.
  2. Heat olive oil in a skillet over medium-high heat. Add garlic and cook and stir until fragrant, about 30 seconds. Add ground turkey, stirring to break up while cooking, until mostly browned, 4 to 5 minutes. Add pineapple chunks, onion, and chipotle peppers. Cook until turkey is no longer pink and fully cooked through, 3 to 4 minutes more.
  3. Stir reserved adobo sauce, 1/4 cup reserved pineapple juice, taco seasoning, and water into the pan. Bring to a boil; reduce heat and let simmer, 5 to 10 minutes.
  4. Divide meat mixture evenly between tortillas and top with cilantro. Fold and serve.
  5. You could use your own spice mix instead of packaged taco seasoning.
