Cheeseburger Quesadilla

One of my favorite burritos from Burrito-Ville, a nearby restaurant at Southeast Missouri State University, served as the model for this cheeseburger quesadilla. Some of the strangest burritos I’ve ever eaten are a specialty of Burrito-Ville. I’ve tried every style of burrito they have, from the BBQ chicken to the Buffalo, but they only have one kind of quesadilla. So I made the decision to convert my favorite there, the cheeseburger burrito, into quesadilla style. I refer to this as my most recent culinary achievement, which is served with fries and a Coke. Serve with more mustard, ketchup, and relish.

Ingredients

  1. 1 teaspoon butter
  2. ½ small yellow onion, chopped
  3. 2 pounds ground beef
  4. 1 tablespoon Worcestershire sauce
  5. 1 teaspoon salt
  6. 1 teaspoon ground black pepper
  7. ½ teaspoon garlic powder
  8. cooking spray
  9. 8 (8 inch) flour tortillas
  10. 2 cups shredded Colby cheese
  11. 4 teaspoons ketchup, or to taste
  12. 4 teaspoons yellow mustard, or to taste
  13. 4 teaspoons sweet relish, or to taste

Instructions

  1. Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until slightly tender, about 5 minutes. Add ground beef, Worcestershire sauce, salt, pepper, and garlic powder; cook and stir until beef is browned and crumbly, about 10 minutes. Remove from the heat, drain liquid from beef, and let sit for 2 minutes.
  2. Meanwhile, heat a griddle or flat pan over medium heat and spray with cooking spray.
  3. Place 1 tortilla on the hot griddle, top with some of the Colby cheese, 1/4 of the beef mixture, 1 teaspoon ketchup, 1 teaspoon mustard, and 1 teaspoon relish. Top with more Colby cheese and 1 tortilla. Flatten the quesadilla with your hand.
  4. Flip quesadilla with a spatula and cook until browned and cheese is melted, 3 to 5 minutes more. Cut quesadilla into 4 pieces. Repeat with remaining tortillas, ground beef, cheese, ketchup, mustard, and relish.

Everyone liked these but I had trouble getting the quesadilla to stay together. I had to flip them using two spatulas to keep them together and we weren’t able to eat them with our hands.

This was a quick, easy & tasty switch up to the classic burger! Cut recipe in half & subbed chopped dill pickles for relish. Served with a side of baked onion rings. Yum! Will definitely make again…and again!

This will be a go-to recipe for sure! I’ll freeze the hamburger in small containers to have on hand. The only thing I did differently was I folder over the large tortilla and cut up instead of putting the second one on to

This was quite good! My husband gave this recipe a thumbs up. Very filling. For 2 people I cut the recipe in 1/2. You will not go away hungry! Using 1 lb. of hamburger made four 6″ quesadillas. I didn’t have any sweet relish, so I cut up dill pickles. I also just squeezed some ketchup and mustard on the quesadilla which was easier for me. To knock it up a notch, I did add a 1/4 tsp. of cumin to spice it up and used 6 inch homemade tortillas!
