Caribbean Jerk Stir-Fry

Raspberry puree is the topping for this simple keto raspberry cheesecake recipe. You only need eight ingredients to prepare this low-carb dessert.

Ingredients

  1. 1 tablespoon vegetable oil
  2. 1 green bell pepper, seeded and cubed
  3. 1 red bell pepper, seeded and cubed
  4. ¼ cup sliced sweet onions
  5. ¾ pound skinless, boneless chicken breast, cut into strips
  6. 2 ½ teaspoons Caribbean jerk seasoning
  7. ½ cup plum sauce
  8. 1 tablespoon soy sauce
  9. ¼ cup chopped roasted peanuts

Instructions

  1. Heat oil in a large skillet over medium-high heat. Cook and stir bell pepper and onion in hot oil until slightly tender, 5 to 7 minutes; transfer onto a plate and set aside.
  2. Add chicken to the same skillet and season with jerk seasoning; cook and stir until chicken is cooked through and no longer pink inside.
  3. Return bell peppers and onions to the skillet and pour in plum sauce; toss to combine. Cook until peppers and onions are heated through, 3 to 5 minutes. Sprinkle with soy sauce and chopped peanuts to serve.

Delicious. Tasty with just the right amount of heat. We added a small can of water chestnuts and some chopped garlic to the mix just for fun. Awesome.

This was fantastic! I could not find any jerk seasoning, so I made my own from a recipe at Joecooks.com. I added a little extra plum sauce than it called for and some extra veggies. I served it over jasmine rice. I will definitely be making this again. Super easy too!

Writing my first review on this App, after trying, at least 100 different recipes… This was, simply put, AMAZING!!!! Excellent mix of flavors and sweet/spicy contrast!!! We doubled the amount of chicken, so we also doubled the amount of jerk seasoning and plum sauce. If you’re on the fence about trying this one, get off the fence bro!! DO IT!!!

Excellent flavor!….couldn’t find plum sauce so used Hoisin instead and it was a great substitute. Might add additional veggies next time such as pea pods or water chestnuts, and will definitely triple the recipe so there are leftovers to be had the next day. Five stars on the YUM meter!

This is a great recipe. My wife is Jamaican and I wasnt sure how the jerk would work with the sweet for them but her family loves it. I made a few slight additions by frying and cutting up a few strips of bacon and adding water chestnuts at the end. I have found that the flavor is excellent when you use Bonne Maman plum preserves with the recipe.

It was amazing! Such great sweet heat. I didn’t have plum sauce so I used sweet chili sauce and added a tablespoon of honey. Tossed in fresh broccoli at the end before adding peppers and onions back in. Left out peanuts (allergy). My husband loved it. My kids thought it was a bit spicy but still ate it all. Will definitely make again.

Fantastic recipe! A real crowd pleaser among a very picky family of nine. The only things I changed, was omitting the peanuts, and instead of sprinkling the jerk spice on top of the chicken and mixing it in, I rubbed each individual piece of chicken with the jerk seasoning and let it sit in the fridge for about twenty minutes before cooking- definitely gives it more kick this way.

I followed the recipe as is. It turn out very good. I used a different Jerk sauce. 1/2 cup of sesame oil and 1/4 cup of molasses and 2tbs soy sauce, 11/2 tablespoons ground allspice, 4to 6 cloves garlic, 1 to 2 habaneros pepper, 1 bunch of scallions or 1 onions cut up, 1 bunch of fresh thyme or ground, black pepper. combine all ingredients into a blender and blend until smooth. pour into a saucepan and cook over medium heat until the sauce change color about 10 to 15 minute, and then pour over the chicken and vegetables. This is very good and spicy. lot of heat!!! I had it with jasmine rice.
