Ingredients
- 3 tomatoes, seeded and chopped
- 2 avocados, chopped
- 1 small onion, chopped
- ¼ cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 lime, juiced
- 2 tablespoons vegetable oil
- 8 corn tortillas
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup cooked white rice
- 2 tablespoons chopped fresh cilantro
- 1 dash green pepper sauce (such as Tabasco®), or to taste (Optional)
Instructions
- Mix tomatoes, avocados, onion, 1/4 cup cilantro, and garlic together in a bowl. Drizzle lime juice over tomato mixture; toss to coat.
- Heat vegetable oil in a skillet over medium heat. Arrange tortillas, 2 at a time, in hot oil; cook until crisp, about 1 minute per side. Remove tortillas using tongs and repeat with remaining tortillas.
- Spoon 2 tablespoons black beans and 2 tablespoons cooked rice onto each crisp tortilla; top with tomato mixture. Garnish tacos using remaining 2 tablespoons cilantro and green pepper sauce.

I loved this. My picky vegetarian daughter had seconds. The tomato mixture is great to dip corn chips in as well. As a taco salad, use chips instead of tortillas–
This recipe was delicious and so easy to make. Perfect for meatless Monday. Even my husband who isn’t a big fan of meatless Monday, enjoyed it and didn’t look in the fridge for something with meat. I used purple onion and definitely recommend not over doing the onion.

Wasn’t sure how flavorful it would be but gave it a try and dang it was fantastic!! I am not a cilantro lover do I omitted that but otherwise it was fantastic!! This is a keeper super easy to make and no meat so great option for meatless Monday! Added queso fresco

Wow! Muy Fabuloso!! I loved these tacos – best I’ve ever made, and the family agreed. Only thing I varied from the recipe was I used less onion as some reviewers suggested, and I chopped up some leftover chicken and added it in. Complements to chef Whirledpeas!
The kids loved it without the green sauce. We used Trader Joe’s jalapeño sauce and it was delicious! Felt like a fresh tasty dinner for a summer evening!!
I really enjoyed this healthy version. My only change was brown rice or Quinoa instead of white rice. These are the perfect summer taco
This recipe is far from tacos. No meat, no refried beans, rice does not go inside tacos. Also, tacos are not flat, tostadas are. I think I will pass on this one. Allrecipes, you bombed out on this one.
allrecipes has great recipes and this one Cali Tacos is one great recipe! I made these a week or so ago and they were a huge hit for me and my husband. This is so easy to do, takes no time, and is delicious! I’ll be making these a lot for sure. We highly recommend these tacos.

I made this with just a quarter of a sweet Vidalia Onion, minced, I omitted the rice and used up one large left over chicken breast, chopped (about a cup) everything else was the same as the recipe. I used corn tortillas, it was delish!
It was great! I loved it! It’s was very quick and simple. Highly recommend it! I added chicken to mine and thought it was great so I recommend putting some kind of meat in there but besides that awesome recipe!!
I will definitely add this to my list of fav new recipes. The cilantro slaw was so fresh tasting! Made avocado cream using plain nonfat Greek yogurt. Great recipe!
This is my new favorite food!! So yummy and it feels healthy to eat it. Recommendation: put a dash of salt on the tortillas when you cook them. The picture does not really show, but they get a little crisp, which “a little crisp” is perfect in our opinion.
This is the PERFECT way to use up leftover rice! Delicious! Another perfect addition to this would be some slice black olives, that’s what I’ll add next time 🙂
