Buffalo Chicken Flatbread Pizza

Ingredients

  1. 2 tablespoons olive oil, divided
  2. 1 (16 ounce) package chicken tenders, cut into small pieces
  3. ½ (1 ounce) package ranch dressing mix
  4. 1 pinch cracked black pepper to taste (Optional)
  5. 1 tablespoon salted butter
  6. 1 shallot, thinly sliced
  7. 2 flatbread pizza crusts (such as Stonefire® Artisan Flatbread)
  8. ¼ cup hot Buffalo wing sauce
  9. 1 cup finely shredded mozzarella cheese
  10. ¼ cup pickled banana pepper rings
  11. ½ cup Gorgonzola cheese crumbles

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. Heat 1 tablespoon oil in a skillet over medium heat. Add chicken, sprinkle with ranch dressing mix, and season with cracked pepper. Cook and stir until no longer pink in the center and the juices run clear, 5 to 8 minutes.
  3. At the same time, melt butter in another skillet over medium heat. Add shallot and saute until soft, about 5 minutes.
  4. Brush each flatbread with remaining olive oil, lightly coat with Buffalo wing sauce, and sprinkle with mozzarella cheese. Layer with chicken, shallots, and banana pepper rings, then sprinkle with Gorgonzola cheese crumbles.
  5. Bake directly on the middle rack of the preheated oven until flatbreads are crispy and cheese is melted, about 15 minutes. Slice and serve.
