Bermuda Cassava Pie

This is a wonderful dish that is cheap and simple. Place the ingredients in a pan and bake immediately! accompany with Italian bread. Good appetite!

Ingredients

  1. 12 eggs
  2. 1 tablespoon salt
  3. 1 tablespoon vanilla extract
  4. 1 tablespoon ground nutmeg
  5. 1 teaspoon ground dried ginger
  6. 3 cups sugar
  7. 3 sticks butter
  8. 5 pounds frozen cassava (yucca), thawed and drained

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan.
  2. Combine eggs, salt, vanilla extract, nutmeg, and ginger in a bowl. Beat to add air and fluff up eggs. Combine sugar and butter in a separate bowl and beat together. Add egg mixture to butter mixture and combine gently.
  3. Place cassava in a large bowl and add egg-butter mixture. Pour into the prepared baking pan.
  4. Bake in the preheated oven for 1 hour. Reduce temperature to 250 degrees F (120 degrees C) and continue baking until pie is set, 2 to 2 1/2 hours more.
  5. If desired, meat can be added to this dish. Generally, chicken and/or pork are used. Approximately 3 to 5 pounds of cooked meat can be added to the center of the pie. Pour 1/2 to 2/3 of the batter into the pan, then spread the meat around the center of the pan, leaving about 1/2 of the batter around the edges with no meat. Pour the remaining batter on top.

This is a really good recipe for making a Cassava Pie but typically, because this pie is extremely rich, a pan this large would serve many more than 12 portions. I will say that this is the first time I’ve heard of adding ginger to Cassava Pie.

This is a good one! I tried it because Safiya said she liked it. Made 3 of them from this recipe so far, and used only 2.5 cups of sugar and 15 eggs.
