Ingredients
- 1 (12 ounce) package dry penne pasta
- 2 teaspoons olive oil
- 1 pound mild Italian sausage
- 1 cup chopped onion
- ½ cup white wine
- 1 (15 ounce) can tomato sauce
- 1 (14.5 ounce) can diced tomatoes with garlic
- 1 (6 ounce) can tomato paste
- 2 cups shredded mozzarella cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain.
- Heat oil in a large, deep skillet. Add sausage and onion; cook over medium-high heat until evenly brown. Drain excess fat. Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon.

- Stir in tomato sauce, diced tomatoes, and tomato paste. Simmer for 10 minutes, stirring occasionally.

- Toss with cooked penne, and place in a 9×13-inch baking dish. Sprinkle top with mozzarella.

While my guests enjoyed this recipe I found it just okay. I had spaghetti sauce that needed to be used so I used that instead of some of the sauces. Other than that I followed the directions. Love Chef John! Sorry!
I added fennel, oregano, and basil. I also used “hot” Italian sausage. This is an easy recipe and was a hit with my family.
We loved it. Used kielbasa for the sausage and added a little diced celery. Substituted chicken broth & lemon Juice equally for the wine. Will add portabella mushrooms next time.

Very easy and everyone really enjoyed it. I just added a little garlic powder to the sauce otherwise I made it exactly as written.
Very good. Added heaping tablespoon of minced garlic, some dried basil and cooked the penne 50% of the time as per some other reviews. Did not use any wine. Also used hot sausage and did not drain the fat (really wasn’t any). Will make again.
Loved it, though I made a couple of changes. Since I had tomatoes and fresh basil from my garden, I added those. I still used the tomato sauce, but I replaced the diced tomatoes with fresh ones along with about a tablespoon of fresh chopped basil. After baking I added another teaspoon of fresh basil to the top as a garnish before serving.
Loved it! We add fresh baby portabella mushrooms diced and cooked down, drained and added to the mix.

Excellent! This is my second time making this dish, because after the first time, it became an instant family favourite. Hubby loves it, along with anyone else who has ever dined with us. The only adjustment I made was omitting the wine. We’re not wine drinkers here, so it’s not practical for us to buy it just to cook with. It still turned out yummy. Two thumbs up!
I made very few changes sticking with the basic recipe. I forgot to get the Diced tomatoes with garlic so I chopped up garlic and sautéed it with the sausage and the onion. I took the sausage meat out of the casing before sautéing because I wanted to incorporate the sausage meat throughout. We all liked it because it was very flavorful. A lot of dish for a small amount of work.

Made with andouille sausage and veggie pasta sauce instead of can of tomato sauce and paste. Added oregano. I would add 2 cans of diced tomatoes. Yummy.
I added hot Italian sausage
I made this years ago, and I went back to make it again. I was just craving something like spaghetti, but different. This is a fav of mine. I will make this for years to come.
This meal is good as a basic, but with my 4 touches it makes it really good! 1) I use half lb. of italian sausage, and a half lb. of ground chuck. 2) I use red wine instead of white (Pinot Noir). I also reduce it down a lot further so the wine is more concentrated and not like adding grape juice to my sauce. 3) I use a can of diced tomatoes, with garlic, oregano, and basil( Red Gold). 5) I use a an Italian cheese blend, and i put half in the middle, and do the same with some grated parmesan(middle and top). I make this all the time now that way, and i even made one for a party one day and it was devoured. The best part is that it is quick and easy, and can make it after coming home from work.
Basic, but fine for a weekday supper.
