Ingredients

  1. nonstick cooking spray
  2. ¼ cup Italian-seasoned bread crumbs
  3. 2 tablespoons grated Parmesan cheese
  4. 2 tablespoons grated Romano cheese
  5. ½ teaspoon salt, or to taste
  6. ¼ teaspoon garlic powder
  7. 1 pound orange roughy fillets
  8. ¼ cup butter, melted
  9. 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Coat a medium baking dish with nonstick spray.
  2. Mix bread crumbs, Parmesan cheese, Romano cheese, salt, and garlic powder together in a shallow bowl.
  3. Brush orange roughy fillets on both sides with melted butter, then dredge in the bread crumb mixture. Arrange fillets in a single layer in the prepared baking dish and sprinkle with parsley.
  4. Bake in the preheated oven until fish flakes easily with a fork, 10 to 15 minutes.

This was a pretty decent way to bake fish. I had only haddock in the freezer and I used ground almond flour flavored with dried Italian seasoning instead of the Italian bread crumbs due to carbs,and cooking gluten free.Added 2 tablespoons of freshly grated parm cheese because I didn’t want to take away the delicate taste of the fish. Butter and plive oil work well for this dish, so I used both. I also added fresh basil and it upped the flavor for our tastes since there were reviews stating the fish needed more herbs and spices.

This was really good. I had 2 orange roughy fillets. I only made one minor change. I sprinkled half the bread crumbs over the bottom of the baking dish and the other half on top. The rest, I followed exactly. My husband who is not a fish lover, but loves Italian food, really loved it. I love fish but am not fond of most Italian food. This was the perfect recipe for both of us. Thank you for the recipe.

The flavor was good but I had hoped it would be crispier. I brushed both sides of the fillets with melted butter then dredged in the seasoned bread crumb Parmesan mixture. I used Panko and shredded Parmesan cheese which didn’t adhere to the fish very well. I baked at 400 for 20 minutes before the topping browned. Everyone thought it tasted delicious so I’ll try it again.

Delicious. I am really picky about my fish and often don’t like fish dishes at all but this was the best I’ve had in a long time. Even better than some I’ve had at restaurants. I love salt and I did feel this recipe was a little salty. I slightly reduced the salt this time but would reduce it even more next time I make it.

Very good! Made per recipe with addition of two shakes of Mrs. Dash for added zip. Did not realize how mild a flavor orange roughy is. Found a fish my husband will be ready to eat again instead of suggesting we go out when I mention fish.
