Air Fryer Vegetarian Cauliflower and Chickpea Tacos

These simple crockpot steel-cut oats are very filling. I simply can’t get up early enough to prepare breakfast for my husband before he leaves for work, so I put this in the slow cooker the night before, and breakfast is ready when he awakens!

Ingredients

  1. 1 tablespoon olive oil
  2. 1 tablespoon lime juice
  3. 1 teaspoon chili powder
  4. 1 teaspoon ground cumin
  5. 1 teaspoon sea salt
  6. ¼ teaspoon garlic powder
  7. 1 (15 ounce) can chickpeas, drained
  8. 1 small head cauliflower, cut into bite-sized pieces
  9. 1 cup sour cream (such as Daisy®)
  10. ¼ cup chopped fresh cilantro
  11. ⅛ cup lime juice
  12. 1 tablespoon Sriracha
  13. salt to taste
  14. 6 (6 inch) corn tortillas

Instructions

  1. Preheat an air fryer to 370 degrees F (190 degrees C).
  2. Whisk together olive oil, lime juice, chili powder, cumin, salt, and garlic powder in a large bowl. Add chickpeas and cauliflower and stir until evenly coated.
  3. Stir together sour cream, cilantro, lime juice, and Sriracha in a bowl until evenly combined. Season with salt to taste.
  4. Place cauliflower mixture in the basket of the air fryer. Cook for 10 minutes, stir, and cook for another 10 minutes. Stir once more and cook until desired crispness, about 5 more minutes.
  5. Spoon cauliflower mixture into corn tortillas and top with sauce.
  6. Substitute Greek yogurt for the sour cream if desired.

This was even better than I could imagine! I don’t own an air fryer so I did pan roast the cauliflower and chickpeas. Also I didn’t have Siracha, but had jalapeno slices and avocado with the tacos. I heated my corn tortillas and had them soft not crisp. Everything else was as written in the recipe. So good! I’ll be having these again soon.
