Ingredients
- 2 tomatoes, cored and sliced
- 1 1/2 cucumbers, peeled, seeded and sliced
- Salt and pepper
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1/2 cup feta cheese, crumbled
Instructions
- In medium bowl combine tomatoes and cucumber. Season with salt and pepper. Add vinegar and olive oil. Toss to coat. Sprinkle on feta and serve.

I used lemon infused olive oil in place of the regular olive oil and it took it over the top in fresh tasting! But I only used half of the oil it called for, that was enough. I, too, put in some red onion…a lovely summer salad, will definitely be having this lots this summer in our house!
Light, flavorful, inexpensive…what more could you want? I added kalamata olives and fresh parsley, as I had them on hand. Took this already great salad to next-level delicious!

This salad was super simple and quick to make and incredibly delicious! I substituted the red wine vinegar for balsamic (because it’s what I had and found the flavor to be full and rich with a slightly sweet finish…might take you from 4 stars to 5 if you make it again! I will definitely be making this again!
