Sophie’s Chopped Salad

Ingredients

  1. 1 head romaine lettuce, finely chopped
  2. 1/2 cup cooked chick peas
  3. 1/2 cup cooked red beans
  4. 1 cucumber, peeled and diced
  5. 2 tomatoes, diced
  6. 1/2 cup fried blue corn tortillas, diced
  7. 1/2 cup diced Monterey Jack cheese
  8. 1/2 cup diced cheddar cheese
  9. 1/4 cup balsamic vinegar
  10. 1 teaspoon Dijon mustard
  11. 1/2 cup olive oil
  12. Salt and freshly ground pepper

Instructions

  1. Toss all salad ingredients together in a medium bowl. Mix together the vinegar and mustard. Slowly whisk in the olive oil and season with salt and pepper to taste. Dress the salad with the vinaigrette and serve.

Was so very dissapointed. I wanted to like it.. but I can say the local  gas station has way better pre made salads..And I followed  this recipe to a “T”.. -what a let down..-not gonna be a repeat.

LOVED this!  Only alteration was adding some grilled chicken for a bit more protein.  Otherwise made as is, and it was a great combo of flavors!

This is my favorite salad. There is something magical about the combo of romaine, kidney beans, blue corn tortilla chips, and this AMAZING dressing. I don’t add the cheese, I think it detracts from the overall flavor and texture. Sometimes I add red bell pepper for crunch.

Amazing. Got rave reviews from those I served. After tasting the dressing as written, I added added a total of 1 tablespoon honey and added another heaping teaspoon of Dijon. I think next time I would use only Pepper Jack cheese, not combine it with cheddar. I did add grilled corn, diced sweet onion and cucumber for no other reason than it is what I wanted to do. The cucumber did not add anything special so will leave it out next time. The corn and onion were good additions I think. The dressing is a must and the salad as written is delicious. Can’t go wrong with a Bobby Flay recipe. Will be making this again and again.

We love this salad. I cut the olive oil in half, and didn’t include the corn chips. Very tasty, healthy salad.

For some reason, this recipe did not come through for me with the flavor punch I was expecting. I love BF’s recipes, and it has plenty of texture (and is very healthy, it just lacks flavor punch for some reason. Will try adding olives and possibly some red pepper or jalapeños.

A prior reviewer asked who Sophie is – I believe she is Bobby’s daughter. Very sweet that he named a recipe for her!

This is always a hit but the recipe posted here does not include the nicoise black olives that the original recipe contains. I sometime substitute the Greek calmative olives. As a previous poster stated, the dressing is a must. I add a tablespoon of honey as I like mine a little sweeter.

This salad is always a hit with guests. The only variation I do is the blue corn chips; I add crumbled (not too much) store-bought blue corn tortilla chips.
