Ingredients
- 1 cup white wine vinegar
- 1 cup sugar
- 1/2 cup honey
- 3 tablespoons bourbon
- Kosher salt
- 4 Kirby cucumbers, thinly sliced into half moons
- 1 medium sweet onion, halved and thinly sliced
- 3 sprigs mint, leaves chopped
Instructions
- Combine the vinegar, sugar, honey, bourbon and 1 teaspoon salt in a saucepan over medium heat. Bring to a simmer, stirring to dissolve the sugar and salt. Set aside to cool.
- Combine the cucumbers and onion in a large bowl. Pour the vinegar mixture over the top and let marinate in the refrigerator until icy cold, 3 to 4 hours. When ready to serve, add the mint and toss to combine.

This is a great recipe IF you cut the sugar in half and the honey
I used half a cup of sugar and it was still too sweet for me.
