Green Papaya Salad in Lettuce Wraps

Note: If green papaya is unavailable, substitute a mixture of carrot and Granny Smith apple.

Ingredients

  1. 1/2 cup peanut oil
  2. 1/4 cup fish sauce, such as nam pla or nuoc nam
  3. 1 tablespoon rice vinegar
  4. 1 teaspoon soy sauce
  5. 1 lime, juiced
  6. 2 teaspoons fresh ginger, minced
  7. 1 teaspoon sugar
  8. 1 tablespoon red chili sauce, such as Srirachi Hot Chili Sauce
  9. Kosher salt
  10. 1 large green papaya, peeled and julienned, see note
  11. 1 cup bean sprouts
  12. 1 medium cucumber, peeled, seeded, and julienned
  13. 1 red onion, sliced thin
  14. 1 small red chile, sliced thin
  15. Fresh cilantro leaves, for garnish
  16. Butter lettuce leaves, for serving

Instructions

  1. For the dressing: In a small bowl add all ingredients and mix well. Set aside for about 1/2 hour to allow the flavors to develop. Taste and adjust seasoning before serving.
  2. For the salad: Combine papaya, bean sprouts, cucumber, onion, and red chile in a large bowl. Pour over the dressing and mix well. Mound onto a platter, garnish with cilantro leaves, and surround with butter lettuce leaves.

If you can find an Asian market that carries Thai, Vietnamese groceries, chances are they might have the freshly julienned green papaya…it’s a common dish in Thailand. Put the salad on top of the regular salad greens….Delicious!!

If you have never had this in the thai/lau restaurants, it may sound strange but it’s worth making! I found the papaya in the summertime in my local asian market, already shredded. Think of it tasting similar to a jaicama (sp?). Crunchy like an apple, but almost a cucumber flavor.
