Ingredients
- Deselect All
- 2 English cucumbers, peeled
- 1 1/8 teaspoons kosher salt
- 1/4 cup sour cream
- 2 tablespoons white balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 1/3 cup mint leaves, chopped
- 1/4 cup chopped chives
Instructions
- Using a Japanese mandolin or a sharp knife, thinly slice the cucumbers about 1/16-inch thick. Place the sliced cucumbers in a large colander and toss well with 1 teaspoon kosher salt. Place the colander over a large bowl and allow the cucumbers to sit and begin to drain for 10 minutes.
- Meanwhile, whisk together the sour cream, white balsamic vinegar, olive oil, mint, chives and the remaining 1/8 teaspoon salt in a large bowl. Set aside.
- Using your hands or a rubber spatula, squeeze or press out the excess water from the cucumbers. It is best to work in small batches to extract as much water as possible. Add the squeezed cucumbers to the sour cream dressing. Using a rubber spatula, toss the cucumber in the dressing until well coated, and serve.

I made this recipe and think it is wonderful. There are only 2 of us, so I used 1 long English cucumber. Halved some of the ingredients, but added more white balsamic & minced red onion. Also used dill, as I don’t like mint. Then added 1 scant tabl of sugar and it is sooooo delicious.
What’s the difference between white balsamic vinegar & regular white vinegar?
Just a great, crisp summer delight. I added red onions and it gave it a little bite too.
Easy to prepare and taste great. This pairs well with many other dishes.
This is great easy recipe! I had all the ingredients and I was able to use my cucumbers before they went bad. I will definitely be making more of this over the summer!
Delicious! I left the mint out though, didn’t have any but will try in it next time I make this.
Very interesting dish. I love cukes and made it with the amounts stated in the recipe. I did sub dill, as I am not a mint fan. I liked the vinegar as directed. Ate two bowls immediately. Used paper towels to pat the cukes dry. Second bowl I put a few bits of feta in it. It worked well with it. I might try the lemon zest and juice next time just to compare. Love trying new things and putting a twist on in!
Did not care for this at all. Very sour.
Little time consuming draining the water out of the cucumber. It was worth the effort. I like the creaminess with the herbs. I love the herb pairing.
We loved the recipe!!! Didnt know there was a discrepancy with the vinegar measurements but there were 3 of us and we ate the whole bowl in one seating and loved it!!!
