Greek Pita Nachos

Ingredients

  1. One 6-count bag pitas
  2. 3 tablespoons olive oil
  3. Kosher salt
  4. 1/2 cup Greek yogurt
  5. 2 tablespoons chopped fresh dill
  6. 2 lemons, juiced
  7. 1/4 cup black olives, chopped
  8. 1 cucumber, finely chopped
  9. 1 tomato, finely chopped
  10. 1/2 small red onion, finely chopped
  11. Feta cheese, for sprinkling

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Brush the pitas with the olive oil and cut each into 6 triangles. Spread the triangles in a single layer on a baking sheet, sprinkle with salt and cook until they are crunchy, 10 to 13 minutes (turn the sheet halfway through cooking if necessary).
  3. In a bowl, combine the Greek yogurt, dill and lemon juice. Add the black olives, cucumbers, tomatoes and red onions and mix to combine.
  4. Spoon the yogurt sauce over the pita chips and sprinkle with feta.

Made this for a party, everyone loved it and snacked all nite long! I did have trouble with the pita chips – 10 min. was too long. Check them after 6 min. or so, then keep an eye on them so they don’t get too done. Also, amount of dill was a bit much, gave a strong flavor. I’d cut down the dill just a bit. I will definitely make this again!

Great summer dish. I didn’t mix the veggies into the yogurt because I wanted them to stay crisp. Also,let the yogurt mix sit for a couple of hours to let the flavors meld a bit. Served at a pot luck and it was a big hit.
