Pineapple Mojitos

Ingredients

  1. 12 fresh mint leaves
  2. 2 teaspoons sugar
  3. 1 lime, quartered
  4. Ice cubes
  5. 4 tablespoons pineapple juice concentrate
  6. 1/2 cup white rum
  7. 1/2 cup club soda
  8. Sugar cane sticks, for serving, optional

Instructions

  1. Divide the mint, sugar, and lime wedges among 4 old-fashioned glasses. Using a pestle (from a mortar and pestle) or the end of a wooden spoon, mash the mint, sugar, and lime together. Add some ice and top off with some pineapple juice concentrate, white rum, and club soda. Swirl with a sugar cane stick and serve.

After seeing this on Food Network I was so excited to try this drink. I followed the recipe exactly and was very disappointed. The pineapple was overpowering. I tried it without the pineapple as well and all you could taste was the rum. I have been looking for years for a good at home mojito recipe, and I am still looking.

Swithced the rum for vodka and crush the ice before adding and it was simply deliciouso! Can substitue splenda for sugar (use 1/2 of reg sugar amt)

I love pineapple juice but to me this drink didn’t have the right balance of flavor….I’d prefer straight pineapple juice.
