Ree’s parfaits consist of layers of crumb followed by a mix of fluffy whipped cream cheese and heavy cream. The addition of coconut chips and extract, plus lime, gives the parfaits a truly tropical flavor.

Ingredients

  1. 1 cup graham cracker crumbs
  2. 1/3 cup sugar
  3. 4 tablespoons (1/2 stick) salted butter, melted
  4. 1/4 cup crushed toasted coconut chips, plus extra for garnish
  5. 1 lime, zested
  6. 4 ounces cream cheese, softened
  7. 1 cup heavy cream, chilled
  8. 2/3 cup powdered sugar
  9. 1 teaspoon coconut extract
  10. Zest of 3 limes plus juice of 1 lime, plus extra zest for garnish

Instructions

  1. For the crumb: Combine the graham cracker crumbs, sugar, butter, coconut chips and lime zest in a bowl. Mix to combine.
  2. For the filling: Using an electric mixer, beat the cream cheese, heavy cream, powdered sugar, coconut extract and lime zest and juice in a large bowl until light and fluffy.
  3. Begin by layering 1/4 cup of the crumb in the bottom of each of 4 parfait glasses. Top each with 1/3 cup of the filling. Repeat the layers once more, then garnish with extra toasted coconut and lime zest.
