Peaches n’ Cream Cupcakes

Ingredients

  1. 1 1/3 cups all-purpose flour
  2. 1/2 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1 cup sugar
  6. 4 tablespoons butter, at room temperature
  7. 1 large egg
  8. 1 teaspoon vanilla extract
  9. 1/2 teaspoon peach extract
  10. 3/4 cup buttermilk
  11. 1/4 cup peach puree
  12. 2 cups fresh or frozen peaches, pureed
  13. 1 tablespoon sugar
  14. 1 tablespoon cornstarch
  15. 1 pound mascarpone cheese
  16. 1 1/4 cups heavy cream
  17. 1/2 cup confectioners’ sugar

Instructions

  1. For the cupcakes: Preheat the oven to 350 degrees F. Place 12 liners in a cupcake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. In a large bowl, beat the sugar and butter together using an electric mixer until it looks creamy. Beat in the egg, vanilla extract and peach extract until the mixture is smooth. Add half of the flour mixture to the butter mixture and stir until almost combined. Add the buttermilk and peach puree and stir again until almost combined. Add the rest of the flour and stir until all the ingredients are mixed in.
  3. Fill the cupcake liners with batter using a large ice cream scoop. Bake for 18 to 20 minutes. Cool for 10 minutes before removing from the pans. Place on a wire rack and cool completely.
  4. For the filling: Place small saucepan on the stovetop and put on medium heat. Put the peaches and sugar in and bring to slight boil. In a separate small bowl, mix the cornstarch and 1 tablespoon water until no lumps. Add the cornstarch mixture to the pan and keep on medium-low heat for about 1 minute. Cool completely before use. (Makes about 1 1/2 cups filling.)
  5. For the frosting: Put the mascarpone, cream and confectioners’ sugar in a stand mixer with the paddle attachment and beat on medium speed until thick, 4 to 5 minutes. (Makes about 2 cups frosting.)
  6. Fill the cupcakes with the peach filling and then frost with the mascarpone frosting.

I thought this cupcake recipe was awesome. I did substitute the peach extract with peach schnaps. I even put some in the cake batter, the filling and the frosting. I think that’s what made the cake so moist.

The frosting was delicious, very light and not too sweet! Cupcakes will have to be refrigerated due to dairy. The cake itself was marginal at best. While it required a plethora of ingredients(peach puree and peach and vanilla extract the flavors were very subtle. I did use schnapps as recommended by another poster but the flavor was just not there even with the cupcakes being filled. While I will not make the cakes again, I will use the delicious frosting for other recipes!!

Don’t put the mascarpone in the mixer! Whip the cream and sugar and then fold in the mascarpone. I ruined three batches trying the exact directions. Cupcakes are extremely tasty!

Wow! These were actually the moistest & fluffiest cupcakes that I ever made. I had fresh peaches so I used those but just couldn’t wait for the peach extract from OliveNation to arrive so I substituted peach schnapps. I had no idea if that was a no-no or not but after they came out, I discovered it was an “oh yes!” (though it may have been fine without the schnapps. I filled the liners up only half way with batter but they still rose above the cupcake liner! I am glad I doubled the recipe!
