Cranberry Fruit Conserve

Ingredients

  1. One 12-ounce bag of fresh cranberries, cleaned
  2. 1 3/4 cups sugar
  3. 1 Granny Smith apple, peeled, cored, and chopped
  4. 1 orange, zest grated and juiced
  5. 1 lemon, zest grated and juiced
  6. 3/4 cup raisins
  7. 3/4 cup chopped walnuts or pecans

Instructions

  1. Cook the cranberries, sugar, and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open. Add the apple, zests, and juices and cook for 15 more minutes. Remove from the heat and add the raisins and nuts. Let cool, and serve chilled.

Oh my gosh it is soooo good. I like the taste of cranberries but don’t like the skin and other pieces so I decoded to try to put the whole cooked thing in my Vitamix. OH MY!!!! So good. I have had to share with friends once I made them taste it. We put it at breakfast on a piece of toast or bagel over cream cheese, we put some over cream cheese on a graham cracker as a quick snack and/or spoon some on yogurts. I had used walnuts and next time will try pecans. My Vitamiix creamed it all easily. I had also added a splash of brandy and that was great too. This can be for Thanksgiving as cranberry sauce but after that or at anytime during the year can be used in so many ways. Thank you for such great great recipe and happy Holidays to all.

Even those that in the past haven’t even looked at any cranberry dish. I have been making this for several years and it is a hit with my youngest grandchildren to my mom & dad. So easy to make, usually make extra for “take home”!
