Cranberry-Blackberry Relish

Ingredients

  1. 2 tablespoons canola oil
  2. 1 onion, finely chopped
  3. 1 jalapeno, seeded and finely chopped
  4. 1 tablespoon freshly grated ginger
  5. 1 1/2 cups fresh orange juice
  6. 1/2 cup sugar
  7. 1 (1-pound bag) cranberries, divided
  8. 1 pint fresh blackberries, halved
  9. Honey
  10. 2 teaspoons finely grated orange zest
  11. 2 tablespoons chopped fresh flat-leaf parsley
  12. Salt and freshly ground black pepper

Instructions

  1. Heat the oil in a medium saucepan over medium heat. Add the onions and jalapeno and cook until soft. Add the ginger and cook for 1 minute. Add the orange juice, sugar, and half the bag of cranberries. Cook, stirring occasionally, until the berries pop and are soft. Add the remaining cranberries and cook 1 minute. Remove from the heat, add the blackberries, honey, to taste, orange zest, and parsley. Season with salt and pepper.

i had left over blackberries, and i found this recipe and i kid you not– the ginger and jalepeno makes this AMAZING!! please try it if you like a little spice esp if you’re a big fan of relishes and pickled taste buds.. this isn’t pickley- but it definitely gives a nice acid bite at the end of the spoonful. thx bobby!
