Ingredients
- One 7.6-ounce box couscous
- 1/2 cup frozen peas, thawed
- 1/2 cup mint leaves, roughly chopped
- 2 tablespoons extra-virgin olive oil
- Zest and juice from 1/2 lemon
- Kosher salt and freshly ground black pepper
- Crushed red pepper flakes, for garnish
Instructions
- Put the couscous and peas in a large bowl and add 1 1/2 cups boiling water. Stir to combine and then cover with plastic wrap. Set aside to steam for 5 minutes.
- Uncover the bowl, fluff with a fork and set aside to cool, about 10 minutes. Toss in the mint, olive oil, lemon zest and juice, 1 teaspoon salt and 1/4 teaspoon pepper. Season with additional salt and pepper if needed. Sprinkle with red pepper flakes.

Made it tonight to accompany grilled salmon. It would have been handy if ingredients were listed in cups rather than by 1 box because I usually buy my couscous in bulk. I made it with 1 cup of dry couscous so the amount of peas was a little skimpy but I would add more peas, more lemon juice and more zest if I make this again. It’s probably better with early summer mint that’s not so near the end of the season as mine was. I may try this again early next summer with the above adjustments.
