Mini Chorizo Corn Dogs

Ingredients

  1. Cooking spray
  2. 3 fully cooked chorizo sausages (about 12 ounces)
  3. 1 tablespoon vegetable oil
  4. 1/2 cup yellow cornmeal
  5. 1/4 cup all-purpose flour
  6. 2 teaspoons sugar
  7. Kosher salt
  8. 1/2 teaspoon baking powder
  9. 1/8 teaspoon baking soda
  10. 1/4 teaspoon cayenne pepper (optional)
  11. 1 large egg
  12. 3/4 cup buttermilk
  13. 3 scallions, thinly sliced

Instructions

  1. Preheat the oven to 375 degrees F and coat a 24-cup mini muffin pan with cooking spray. Slice the chorizo into 24 rounds, about 1/2 inch thick.
  2. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, stirring occasionally, until lightly browned, about 3 minutes. Transfer to a paper towel-lined plate to cool.
  3. Meanwhile, combine the cornmeal, flour, sugar, 1/2 teaspoon salt, the baking powder, baking soda and cayenne in a large bowl. In another bowl, whisk the egg and buttermilk, then whisk into the cornmeal mixture along with the scallions until smooth. (It should be the consistency of pancake batter.)
  4. Pour the batter into the prepared muffin pan, filling each cup about halfway. Place a piece of chorizo in the center of each cup. Bake until golden and cooked through, about 12 minutes. Let cool 5 minutes, then remove from the pan.

Disappointed.  Even though only filling the mini muffin cups  half way as directed, the cooked batter covered most of the sausage tops.  Corn bread bland and dry texture.  After eating a few, we ended up taking the sausage out and eating those tasty bites alone.

These were great! I have a huge Christmas party each year and am always looking for apps that are a little more substantial than the usual and these fit the bill. I pre made the sausages a couple of days before (fyi, don’t overcook them, mine got a little dry because I cooked them too long) and on the day of the party I just whipped up the batter which was easy just a few ingredients, no mixer required, just a which. Low mess for the day of party. They look great and taste better. I served with them a spicy ketchup and a honey mustard dipping sauces. Big hit, making them for a party I’m going to coming up next weekend.
