Hush Puppies

Ingredients

  1. Vegetable oil, for deep-frying
  2. 3/4 cup yellow cornmeal
  3. 1/2 cup all-purpose flour
  4. 2 teaspoons sugar
  5. 1 teaspoon baking powder
  6. 1/2 teaspoon baking soda
  7. Kosher salt
  8. 1/2 cup buttermilk
  9. 2 large eggs
  10. 2 tablespoons unsalted butter, melted and cooled
  11. 3 scallions, finely chopped

Instructions

  1. Heat 2 inches of oil in a large, deep cast-iron skillet or Dutch oven to 365 degrees F.
  2. Whisk together the cornmeal, flour, sugar, baking powder, baking soda and a good pinch of salt in a medium bowl. Beat in the buttermilk and eggs until combined, then stir in the melted butter and scallions to make a thick batter.
  3. In two batches, drop the batter by the tablespoonful into the hot oil. Fry, turning once, until crisp and golden, about 3 minutes per batch. Drain on paper towels; season immediately with salt.

Wow, I just made them today and they were awesome!!  I doubled the recipe since I had guests coming over.  I also added some diced jalapeno which really kicked up the flavor.  I had read some other recipes which added more sugar, but these were just the right balance of sweetness without being overpowering.  Thanks Ayesha!!

WOW… First time making hush puppies and they were great I didn’t have buttermilk so I used half a cup of real milk with a tablespoon of vinegar it turned out great
