Blackberry Cornbread Cake

Ingredients

  1. 2 tablespoons butter
  2. 2 cups whole-fat buttermilk
  3. 1 teaspoon vanilla bean paste
  4. 2 large eggs
  5. 1 cup all-purpose flour
  6. 3/4 cup yellow cornmeal
  7. 3/4 cup maple sugar
  8. 1/2 teaspoon baking soda
  9. 1/2 teaspoon fine sea salt
  10. One 6-ounce container blackberries, plus more for garnish
  11. 1/2 cup heavy cream
  12. Maple syrup and whipped cream, for serving

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 10-inch ovenproof skillet with the butter.
  2. In a medium bowl, whisk together the buttermilk, vanilla bean paste and eggs. In a separate medium bowl, combine the flour, cornmeal, maple sugar, baking soda and salt. Stir in the buttermilk mixture until smooth.
  3. Line the blackberries in the buttered skillet, then pour the batter over the top. Pour the cream into the center of the batter. Bake until the top crust is golden brown, 40 to 45 minutes.
  4. Serve warm with blackberries, maple syrup and whipped cream.

Mine was mushy & did not taste good. I didn’t have the maple sugar so I used granulated. The blackberries were not tasty. Disappointing but I love watching Gesine.

I too dislike the competition shows.PLEASE bring back just good cooking and baking shows. I like this baker very much.

Excellent recipe I used blueberries instead of blackberries. I also did did not have maple sugar. I used maple syrup with the butter Milk mixture. It was delicious and was not too sweet.

I made this cornbread this morning, with blueberries, because that’s what I had on hand.

It was wonderful.  Will make again for sure.  Please bring Gesine’s Baking in Vermont Show back.  A real honest to God baker.  So few shows I really like now are: The Kitchen with a top notch personalities and chef skills, Beat Bobby Flay and love Guy Fieri at The Ranch to see the creativity of those top chefs unleashed.
