Jalapeno Honey Butter Grilled Corn

Ingredients

  1. 4 ears of corn, shucked and cut in half
  2. 1 stick (8 tablespoons) salted butter
  3. 2 tablespoons honey
  4. 2 whole cloves garlic, smashed
  5. 1/2 cup crispy fried jalapenos, crushed, such as French’s
  6. Chili lime seasoning, such as Tajin, for garnish

Instructions

  1. Preheat the grill to 375 degrees F, setting one side of the grill to medium-high heat and the other side to low heat.
  2. Place the ears of corn directly on the grill grates on the medium-high side of the grill. Let char 2 to 3 minutes per side, about 10 minutes total.
  3. While the corn is grilling, in a 9-by-13-inch disposable aluminum baking pan, add the butter, honey and garlic. Place the pan directly on the grill grates on the low side of the grill. Stir occasionally to incorporate the butter and honey.
  4. Once the corn is done grilling and the butter is melted, remove the pan from the grill. Roll each piece in the baking pan, coating each side of the corn. When ready to serve, sprinkle with the crispy jalapenos and chili lime seasoning.

We watched Jeff make this on The Kitchen episode today. Made a second grocery trip to add this side to our smoked tri-tip dinner. Literally IN HEAVEN with this corn. It is savory and sweet and spicy all at the same time. ABSOLUTELY MOUTH-WATERING DELICIOUS!

Made this for a Labor Day bbq and everyone loved it. I doubled the butter because I made 12 ears of corn and out the Tajin and jalapeños on the side for those who don’t like spice. Everyone loved it and went back for more. Those who didn’t try the spicy sides the first time went back and tried it the second time and raves about it again. Great bbq side
