Baked Creamed Corn With Red Bell Peppers and Jalapenos

Ingredients

  1. 8 ears corn, husked
  2. 2 red bell peppers, diced
  3. 2 jalapeno peppers, diced
  4. 1 cup heavy cream
  5. Kosher salt and freshly ground pepper
  6. 1 stick salted butter, cut into pieces

Instructions

  1. Preheat the oven to 350 degrees F. Slice the corn kernels from the ear in a large, deep bowl with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and the creamy milk. 
  2. Add the red bell peppers, jalapenos, heavy cream, 2 teaspoons salt, a generous amount of pepper and the butter and mix well. Pour into a 9-by-13-inch baking dish. Bake until hot and bubbly, 45 to 55 minutes.

A huge family favorite and requested at gatherings. I don’t change or alter the recipe at all. Just a hint, when you scrape the cob with a knife to get all the corn milk, the more you scrape, the more soupy the dish. My own personal preference is not quite so much liquid but it’s delicious either way.

I have been making this recipe for quite some time now my husband thinks it is the best thing ever. I make it for every single summer barbecue that we have or go to. I have even cheated and used frozen corn when I’ve been in a pinch just remember you need to thaw the corn first or it will be watery I even use a tad bit less cream if I use frozen corn. my neighbor actually offered to pay me if I would make it for their barbecue I’m saying this is delicious and super easy

Great but instead sauté the ingredients in butter for a few minutes then add some heavy cream and reduce it until thickened . The same results without over cooked corn in 15 minutes I make this all summer.
