Bacon-Corn Relish

Instructions

  1. Finely grind 1/4 cup dried porcini mushrooms in a spice grinder. Cook 8 slices chopped bacon in a large skillet over medium heat, stirring, until almost crisp, about 10 minutes. Pour off most of the drippings; add 1/2 finely chopped red onion, the ground mushrooms and the kernels from 2 ears of corn to the skillet. Cook, stirring, until the corn is tender, about 3 minutes; stir in some chopped parsley.

I didn’t have bacon, so I used chorizo. I used 1 pound chorizo but 8-12 oz will do. I used 1 ear of corn and a cup of cauliflower rice to cut down on carbohydrates. You can’t taste the cauliflower and it is healthy. I added 1/3 red bell pepper chopped + the onion + parsley. It is out of the ball park.

Great! Turns a lame hotdog into something amazing. We were scooping it up with tortilla chips at one point bc it’s so tasty. Yum!
