Air Fryer Salmon and Asparagus for One

A delicious supper for one that is prepared quickly. The somewhat sweet, mildly acidic, and mildly smokey sauce is the ideal accompaniment to properly cooked salmon and delicate asparagus.

Ingredients

  1. 1 tablespoon honey
  2. 1 tablespoon olive oil
  3. 2 teaspoons Dijon mustard
  4. ⅛ teaspoon ground paprika
  5. ⅛ teaspoon salt
  6. ⅛ teaspoon black pepper
  7. 1 (6 ounce) fillet salmon fillet, thawed if frozen and patted dry
  8. ½ pound fresh asparagus, trimmed

Instructions

  1. Stir together honey, olive oil, mustard, paprika, salt, and pepper in a small bowl. Whisk well to form a slightly thick sauce.
  2. Brush about 1/2 of the marinade all over both sides of the salmon fillet and place it into the air fryer basket. Air-fry at 400 degrees F (200 degrees C) for 4 minutes.
  3. Open the basket and place the asparagus around the fillet as best you can, being careful not to cover it. Brush remaining sauce all over the asparagus and on top of the salmon fillet.
  4. Air-fry at 400 degrees F (200 degrees C) until salmon is cooked through and asparagus is tender, 6 to 7 more minutes.

My very picky daughter thought it was the best salmon she has had in recent memory. ( My husband is usually the salmon cook around here.)I didn’t have Dijon mustard though. I used a German hot mustard. I made it in batches since there are 3 of us and it is a recipe for one. So we did not eat at the same time.

This recipe was great. I was looking for something easy and quick since I had salmon that needed to be cooked. I did, however, eyeball the amount of the ingredients (you could taste it to see if it’s to your liking). Plus I wanted it to be a little spicy so I added about a teaspoon of chili garlic sauce and a few shakes of cayenne pepper powder. I also cut the time down to 7 minutes because I didn’t want it too well done. This recipe is definitely a keeper and I will be using it again!
