Air Fryer Cod

Generally speaking, I’m a very good cook, but I’ve never been able to make pumpkin bread well. My 11-year-old daughter can prepare this dish because it is foolproof and so simple.

Ingredients

  1. 1 large egg
  2. 1 pinch salt
  3. ¾ cup panko bread crumbs
  4. 2 tablespoons ranch seasoning mix
  5. 4 (4 ounce) frozen cod fillets
  6. nonstick cooking spray

Instructions

  1. Preheat the air fryer to 400 degrees F (200 degrees C) for 5 minutes.
  2. In a shallow dish, whip egg until lemon colored and frothy. Season with a pinch of salt. In another shallow dish combine panko bread crumbs and ranch seasoning. Dip cod fillets first in the egg mixture, then in the panko mixture.
  3. Line an air fryer basket with a perforated parchment round. Carefully place cod into the basket and spray with nonstick spray.
  4. Air fry for about 8 minutes. Carefully flip over, spray again with nonstick spray, and air fry until cod flakes easily with a fork, about 7 more minutes.

This was not only the easiest but the best tasting cod I’ve ever had. Nice and moist and not dry at all. The only change I made was to use Old Bay seasoning instead of Ranch as that’s what I had. I think it would be good no matter what seasoning was used. I’ll have to get some ranch for next time.

When I first put them in the air fryer I was concerned, but finish product is beautiful. The flavor is really good it came out so crispy.

Excellent fish recipe, as either a fish sandwich on a semi hard roll , or “fish on a dish”. I have it with a copycat recipe of Red Lobster tarter sauce. It can also be found online. Delicious and a perfect compliment to the excellent tasting, breaded cod fish recipe here.

This is the second time I made this and instead of ranch I use Seven Seas Italian dressing in the packet and added just a little bit of the previous spices the cayenne a little bit of pepper the old Bay garlic, some herb fish rub I have and it turned out great!
