The mildly spiced summer sausage recipe is very simple to make and produces fantastic results. It provides a tasty snack when combined with crackers and cheese and is made using ground beef, mustard seed, garlic powder, black pepper, and liquid smoke flavoring.

Ingredients

  1. 1 cup butter
  2. 2 cups white sugar
  3. ½ cup cocoa powder
  4. 4 large eggs
  5. 1 teaspoon vanilla extract
  6. 1 ½ cups all-purpose flour
  7. ½ teaspoon baking powder
  8. ½ cup chopped pecans (Optional)
  9. ¼ cup peanut butter chips (Optional)
  10. ¼ cup caramel syrup

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 2 mini muffin tins.
  2. Melt butter in a large saucepan over medium heat. Remove from heat. Add sugar, cocoa powder, eggs, and vanilla extract, in that order; beat until well blended. Add flour and baking powder. Beat slowly, gradually picking up speed until batter is smooth. Fold in pecans and peanut butter chips. Divide batter among mini muffin cups.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes. Let brownies cool for 10 minutes. Drizzle caramel syrup on top.
  4. Substitute chocolate chips for the peanut butter morsels if preferred. Use walnuts or any type of nuts you desire.

Made these for a coworker and they were amazing! I didn’t have nuts, caramel or chocolate chips but I did sprinkle them with powdered sugar. Will share the recipe and will make again.

This recipe is simple and tasty. I omitted the nuts and peanut butter chips, choosing to put a semi-sweet chocolate chip in the center of each brownie bite before placing them in the oven. The results were great! The only issue is the suggested cook time. Mine were ready within 12 minutes. Other than that, this is a great base recipe that seems able to accommodate many changes. (For instance, I’d love to try substituting heath bits for the peanut butter chips!)
