Chocolate Puffed-Wheat Squares

For my cafe, I used to cook a batch of these every two days. They were incredibly well-liked and frequently sold out. a chocolate square that is delicious and portable and works nicely in lunchboxes. I like to make Reese’s pieces for Halloween treats by just sprinkling them over the top and pressing them into the square’s top while it’s still warm in the pan. Enjoy!

Ingredients

  1. 12 cups puffed wheat cereal
  2. 10 marshmallows
  3. 1 cup packed brown sugar
  4. ½ cup corn syrup
  5. 6 tablespoons unsweetened cocoa powder
  6. ⅓ cup butter
  7. 1 teaspoon vanilla extract

Instructions

  1. Grease a large bowl and a 9×13-inch baking dish.
  2. Place cereal in the prepared bowl.
  3. Combine marshmallows, brown sugar, corn syrup, cocoa powder, and butter in a small saucepan; cook and stir over medium-low heat until smooth and bubbling. Remove saucepan from heat and stir in vanilla extract.
  4. Pour chocolate mixture over cereal and stir until evenly coated. Press cereal mixture into the prepared baking dish and cool for 10 minutes. Turn cereal mixture onto a work surface and cut into 12 or 24 squares using a serrated knife. Individually wrap squares in plastic wrap or store in an airtight container.
  5. Substitute 2 cups miniature marshmallows for the 10 regular-sized ones if desired.

I loved the chocolate mixture and would definitely try this again with a more crisp cereal like rice krispies or cornflakes. The puffed wheat became chewy and tasted bland with the chocolate. Although I must say (yes I know how this sounds 😉 the flavour improved by the second and third one! The kids loved them, but then they would eat just about anything, if it was smeared in chocolate!
