I accepted another challenge from an AR member. Her request was for me to prepare a dessert using SPAM® luncheon meat. Success was achieved!

Prep Time: 20 mins
Cook Time: 40 mins
Total Time: 1 hr
Servings: 12
Yield: 1 9×12-inch pan

Ingredients

  1. 1 cup butter, softened
  2. ⅔ cup firmly packed brown sugar
  3. ⅔ cup white sugar
  4. 2 eggs
  5. 2 teaspoons vanilla extract
  6. 1 cup all-purpose flour
  7. 1 teaspoon baking powder
  8. 1 teaspoon ground cinnamon
  9. ½ teaspoon salt
  10. ¼ teaspoon ground nutmeg
  11. 2 cups quick-cooking rolled oats
  12. 1 ¼ cups chocolate chips, divided

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat butter, brown sugar, white sugar, eggs, and vanilla extract together in a bowl using an electric mixer until light and fluffy. Stir flour, baking powder, cinnamon, salt, and nutmeg into creamed butter mixture until batter is just combined; fold in oats and 1 cup chocolate chips. Pour batter into a 9×12-inch baking pan; sprinkle with remaining 1/4 cup chocolate chips.
  3. Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 40 minutes.

This recipe worked fantastic and was delicious . It turned out much better than anticipated 🙂

I added a 1/2 c of cocoa powder to make them chocolaty! Very tasty. Advise to cook a little less time for a chewy brownie if you like them that way.

Loved this recipe! It was easy to make a smaller batch (I adjusted it to 6 servings and made it in a small pie pan).

These were good, but I think “brownie” threw me off a bit. I was expecting a decadent chocolate/cinnamon delight, but it’s more like an oatmeal raisin (w/out the raisin) cookie bar than a brownie. Interesting change of pace, but not sure I’d make them again. THANKS for the recipe!
