Ingredients
- 2 cups whole spelt flour
- 1 cup carob powder
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 ½ cups honey
- 1 cup strong brewed vanilla hazelnut tea (such as Yogi®)
- ½ cup heavy cream
- ½ cup vegetable oil
- 2 eggs
Instructions
- Preheat an oven to 350 degrees F (175 degrees C). Mix the spelt flour, carob powder, salt, and baking powder together in a large bowl.
- Stir the honey, brewed tea, cream, vegetable oil, and eggs together in a separate bowl. Add the honey mixture into the flour mixture, and stir to thoroughly combine; pour into an 8×11-inch baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out gummy rather than wet, about 45 minutes. Allow to cool before refrigerating overnight for best results.

These were edible and my girls certainly enjoyed them, but I found these to be more cake than brownie. I thinking the baking powder needs to be reduced so it doesn’t puff up like a cake. I’d also reduce the cooking time so it was more fudgey – I pulled mine out 5 minutes early and it was still over done. I might try this again but I will doctor it some if I do.
I used soy milk instead of cream and I cut the honey amount down to 1/2 cup. These were worth making! I’ll be making them again!
It is hard to make a moist, good, and good for you brownie but this recipe is wonderful. The addition of brewed tea really adds to the flavor.
