Ingredients

  1. cooking spray
  2. 9 ounces crispy rice cereal
  3. 1 (11 ounce) package caramel bits (such as Kraft®)
  4. ½ cup butter
  5. 1 (16 ounce) package marshmallows

Instructions

  1. Prepare a baking dish and a large mixing bowl with non-stick cooking spray. Pour cereal into a large mixing bowl and set next to your stove.
  2. Heat caramel bits and butter together in a large saucepan over low heat until both are melted and the mixture is smooth, about 5 minutes; add marshmallows. Continue to cook the mixture, stirring regularly, until the marshmallows are melted and the mixture is smooth, about 5 minutes; pour immediately into the middle of the cereal in the bowl and quickly stir to coat cereal completely.
  3. Spread the coated cereal into the prepared baking dish. Spray the back of a spoon with cooking spray and use it to press the cereal into an even layer. Let cereal cool completely before cutting into squares.

DH, our teenager, and I all thought these were very tasty. I did use the entire 12 ounce box of cereal – they were very hard to stir after adding the melted marshmallow/caramel mixture but I like that they did not come out quite as sweet as if I used less cereal, especially as I drizzled some melted chocolate over the finished bars… Instead of using a baking dish, I buttered two cookie sheets and kept the finished bars fairly thin and I will definitely continue to do so in the future.

Very easy to make and very tasty. I discovered after I was getting ready to make these that I bought a 10 ounce bag of marshmallows instead of 16 ounce. Also I had no idea how much 9 ounces of cereal equated to, so I used 6 cups of cereal like the original Rice Krispie recipe. Even with the less amount of marshmallows, they turned out great!

I just made this with FRUITY PEBBLES and pure vanilla extract (add the same time as the salt.) They turned out AMAZING!!!

The only thing I did differently was to use waxed paper to press the mixture into the dish instead of an oiled spoon. What’s not to like about this sweet treat?! Yummy!

I sprinkled semi sweet chocolate chips over the top and heated in oven to melt. then spread chips, cooled and cut. Yummy!
