Ingredients
- cooking spray
- 9 ounces crispy rice cereal
- 1 (11 ounce) package caramel bits (such as Kraft®)
- ½ cup butter
- 1 (16 ounce) package marshmallows
Instructions
- Prepare a baking dish and a large mixing bowl with non-stick cooking spray. Pour cereal into a large mixing bowl and set next to your stove.
- Heat caramel bits and butter together in a large saucepan over low heat until both are melted and the mixture is smooth, about 5 minutes; add marshmallows. Continue to cook the mixture, stirring regularly, until the marshmallows are melted and the mixture is smooth, about 5 minutes; pour immediately into the middle of the cereal in the bowl and quickly stir to coat cereal completely.
- Spread the coated cereal into the prepared baking dish. Spray the back of a spoon with cooking spray and use it to press the cereal into an even layer. Let cereal cool completely before cutting into squares.

DH, our teenager, and I all thought these were very tasty. I did use the entire 12 ounce box of cereal – they were very hard to stir after adding the melted marshmallow/caramel mixture but I like that they did not come out quite as sweet as if I used less cereal, especially as I drizzled some melted chocolate over the finished bars… Instead of using a baking dish, I buttered two cookie sheets and kept the finished bars fairly thin and I will definitely continue to do so in the future.
Very easy to make and very tasty. I discovered after I was getting ready to make these that I bought a 10 ounce bag of marshmallows instead of 16 ounce. Also I had no idea how much 9 ounces of cereal equated to, so I used 6 cups of cereal like the original Rice Krispie recipe. Even with the less amount of marshmallows, they turned out great!

I just made this with FRUITY PEBBLES and pure vanilla extract (add the same time as the salt.) They turned out AMAZING!!!
Instead of caramel i used M&M’s
The only thing I did differently was to use waxed paper to press the mixture into the dish instead of an oiled spoon. What’s not to like about this sweet treat?! Yummy!
I sprinkled semi sweet chocolate chips over the top and heated in oven to melt. then spread chips, cooled and cut. Yummy!
