Best Date Squares Ever

You wouldn’t know it by eating these sweet squares, but they contain less sugar than other recipes. Allow the squares to sit at room temperature for 15 minutes before serving.

Ingredients

  1. 4 cups chopped pitted honey dates
  2. ¾ cup orange juice
  3. ½ teaspoon lemon juice
  4. 2 cups whole wheat flour
  5. 2 cups quick-cooking oats
  6. ¾ cup brown sugar
  7. ½ teaspoon baking powder
  8. ½ teaspoon baking soda
  9. ½ teaspoon salt
  10. 1 ½ cups unsalted butter, melted and cooled

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9×11-inch baking pan and line with parchment paper.
  2. Heat dates, orange juice, and lemon juice in a large saucepan over medium-low heat, stirring often, until dates are soft, about 6 minutes.
  3. Stir whole wheat flour, oats, brown sugar, baking powder, baking soda, and salt together in a large bowl; stir in melted butter. Press half of the oat mixture evenly into the prepared pan.
  4. Spread date mixture evenly over oat mixture; sprinkle remaining oat mixture evenly over date mixture and press down lightly.
  5. Bake in the preheated oven until golden, about 20 minutes. Allow to cool in the pan to room temperature, about 30 minutes. Refrigerate until chilled before cutting into squares, about 1 hour.

awesome easy recipe. My MIL was craving date squares so I whipped up a batch for her and now she requests it all the time! I did tweak it just a wee bit. I used a full cup of orange juice and just simmered the chopped dates until they were a nice gooey texture. I didnt have whole wheatflour so I just used regular all purpose flour and because my MIL is diabetic I used Splenda brown sugar. FYI Im not a date fan so I experimented with craisins and it was faaaaaabulous

Easy to make. I like that there is only 3/4 cup of brown sugar in this recipe.

The sugar could be reduced here. I made half the recipe in a 8×8 pan, yielding 16 squares. I think there is too much butter and not enough oats but it is a good starting point. Thanks, Suzanne.
