Greek roast lamb and potatoes are unparalleled. Throughout the winter, Greeks frequently consume meat (lamb, beef, or chicken) and potatoes baked in the oven. My aunt revealed a trick to me that elevates the typical roast lamb on my most recent trip to Athens. She advised substituting one orange’s juice for the typical lemon juice. When I got back home, I tried it, and it is great! It might be some time before I use lemons again, but this recipe is both tasty and easy to make.

Ingredients
- ½ cup butter
- 2 cups basic cookie mix
- 1 egg
- 1 teaspoon vanilla extract
- ½ cup flaked coconut
Instructions
- Preheat oven to 350 degrees F (180 degrees C).
- Melt butter over low heat and stir into the Basic Cookie Mix. Beat egg lightly and add to mixture. Stir in vanilla and coconut and mix well.
- With lightly floured hands shape into 1 inch balls and arrange about 2 inches apart on a greased cookie sheet.
- Bake for 12 to 15 minutes until golden. Cool a couple of minutes before removing from cookie sheet to racks to complete cooling.

Reviews
The coconut seemed to firm the cookies up a little bit better compared to the plain choc chip recipe. I also added choc chips to this batch, and reduced the butter to 6Tb. Also, I made some larger & some smaller, and the smaller ones seemed to not flatten out as much. I kind of liked the smaller/thicker ones better, but some might like the thinner crispy ones. VERY sugary (I think too much sugar in the basic mix), but tasty!
I am not a big fan of coconut cookies but my husband favors them above any others and we both enjoyed these. I enjoyed them because they were easy to make with the basic cookie recipe and they did not get flat like many cookies do. They were just right, nice and chewy.
I think the idea of having the mix in the pantry and ready to use is fantastic and have made several others of the cookies with success. The coconut however for me was way to runny and cooked paper thin. But the other recipies were good.
