These unbelievably easy — and gluten-free — cookies have only three ingredients and are a great way to use up those extra mixed nuts hanging out in your pantry.
Level: | Easy |
Total: | 50 min |
Active: | 15 min |
Yield: | about 12 cookies |
Ingredients
- 2/3 cup roasted and salted deluxe mixed nuts
- 1 large egg white
- 1/2 cup sugar
Instructions
- Position a rack in the center of the oven and preheat to 300 degrees F. Line a baking sheet with parchment.
- Pulse the nuts in a food processor until coarsely chopped.
- Beat the egg white in a medium bowl with an electric mixer until stiff peaks form, about 2 minutes. Gently fold in the sugar and nuts. Spoon leveled tablespoons of the batter onto the prepared baking sheet, about 12 cookies total.
- Bake, rotating halfway through, until golden brown, 25 to 30 minutes. Let cool completely on the baking sheet set on a wire rack.

Reviews
Almost identical to a Sephardic cookie known as Mustachudos! They are very good and simple to make.
Very good. Love that it is gluten free. Nutty crunchy cookie. You get the flavors of all the nuts. Easy to make. I will decrease sugar to 1/3 cup next time.
I need to know how long to bake the cookies
I enjoyed a new gluten free cookie but found that reducing the sugar to 1/3 cup was better
