Strawberry Snowball Cookies

I love to enjoy a couple of these rose-tinged cookies with a cup of tea. I make the sweet pink sugar dust by pulsing freeze-dried strawberries with powdered sugar. For a less dense cookie, you can make them half as big.

Ingredients

  1. 1 cup (2 sticks) unsalted butter, softened
  2. 1/2 cup powdered sugar
  3. 1 teaspoon vanilla extract
  4. 2 cups all-purpose flour
  5. 1/4 teaspoon kosher salt
  6. Two 1-ounce packages freeze-dried strawberries
  7. 1 cup powdered sugar

Instructions

  1. For the cookies: Beat the butter and powdered sugar with an electric mixer at medium speed until creamy. Beat in the vanilla. Combine the flour and salt in a medium bowl, then add to the butter mixture and beat until combined. Refrigerate for 30 minutes.
  2. Preheat the oven to 350 degrees F.
  3. Scoop the dough into 1-inch balls using a cookie scoop and place 2 inches apart on parchment paper-lined baking sheets. Bake the cookies until golden brown on the bottoms, 13 to 15 minutes.
  4. For the strawberry sugar dust: Meanwhile, pulse the strawberries in a food processor until it forms a powder. Add the powdered sugar and pulse until combined.
  5. Roll the warm cookies in the strawberry powdered sugar and transfer to wire racks to cool. Roll in the strawberry powdered sugar again, if necessary, after cooled.

Easy and yummy. I got the freeze dried strawberries from Trader Joe’s. I added a little of the pulverized strawberry to the batter. The tip about using half of the dipping sugar was on point. Chilling the dough helped maintain the shape. They turned out pictures perfect

Did Not Turn Out To Be Balls, They Just Looked Spread Out In The Oven And Looked Liked Regular Pink Cookies. They Where Also Definitely Very Dry.

Can you add strawberry extract to the batter? And if so, how much would give it that flavor without being overwhelming?

I was excited to try these and was disappointed. They were too dry, I even shortened the baking time. Strawberry flavor was nice, I did cut that in half.

Made these today great strawberry flavor! Agree with reviewer Joe to cut the strawberry dust in half. The dried strawberries were hard to find in local stores. Probably best to order online. I plan to try with other dried fruits like blueberry and banana. Thanks Miss Brown!

Delicious, light, fruity flavor in these cookies! Cut the strawberries and Powdered sugar mix in half, I still had plenty to double dunk the cookies AND store them in extra powder. Not super sweet and a nice change from most cookies.

These are so good and something different! My daughters asked to add chocolate, and so we dipped half of each cookie in melting chocolate and they looked like ladybugs. They were a hit!
