Lemon Bars

Ingredients

  1. 1 cup unsalted butter, melted
  2. 1/2 cup powdered sugar
  3. 2 cups unbleached allpurpose flour
  4. 2 cups sugar
  5. 4 tablespoons unbleached allpurpose flour
  6. 1/2 teaspoon baking powder
  7. 4 eggs
  8. 6 tablespoons fresh lemon juice
  9. 1/2 teaspoon fresh lemon rind

Instructions

  1. Preheat oven to 350 degrees. Mix together butter, powdered sugar and flour until well blended. Press mixture into the bottom of a 9×13-inch glass baking dish. Bake for 20 minutes.
  2. Sift together sugar, flour and baking powder into a mixing bowl. Add eggs, lemon juice and lemon rind. Beat by hand or with electric mixer until well blended. Pour mixture over crust and bake for 25 minutes.
  3. Allow bars to cool, then dust with powdered sugar and cut into squares.

Great recipe. My mom always makes the most wonderful lemon bars for christmas, but she won’t give her recipe up yet. This is the closet one I have found to her unbelievible cookie. Can’t wait to share these with her on Christmas eve.

I really love Key Lime juce and found that it also works well in this recipe. I have also used Meyer Lemon juice for a less tart taste. Another variation is to add an extra layer of sour cream mixed with vanilla and suger just like the topping on a cheese cake. (one small container sour cream) one tablesooon sugar, 1/2 teaspoon valilla. Cook on top of bars the last 5 minutes.

I had never made lemon bars before, so I searched on Food Network to find a recipe. I used this one because it had 5 stars, but I did use others’ recommendations on changes: decreased sugar, increased amount of lemon juice.) I thought they were really great and easy to make.

I customized this a bit by adding 1/2 of cream cheese and using 3 lemons (rind and juice)and adding 1 more egg and 1 more tablespoon flour (to even out the extra juice I add). Its delicious but you do have to cook it longer. I usually leave it at 350 for 25 min and then drop it down to 220 for 35 minutes (until firm) then you have to REFRIGERATE. They taste WAY better the next day!
