Instructions

  1. Whisk 2/3 cup granulated sugar, 2 beaten egg whites, 2 teaspoons vanilla and 1/2 teaspoon salt. Stir in 2 2/3 cups unsweetened shredded coconut. Drop by tablespoonfuls, then form into pyramids with your fingers and bake 15 to 20 minutes at 350 degrees.

This recipe should have more cooking info: with electrical mixer whisk egg whites until firm peaks forms. Continue whisking, slowly add sugar, vanilla and salt. Whisk till sugar is completely dissolved. With a large spatula mix in coconuts- the mixture needs to be well combined, but not deflated.
And leave them alone until they are completely cooled.
Spay everything with non-stick spray and the cookies turn out really well!

These were really easy to make. I made sure to make them on foil over my cookie sheet so clean up would be easy. I coated the foil with some non-stick spray. Also, to make them easier, I put some of the non-stick spray on my hands. It made it really easy to make little balls to put on the sheet. I drizzled some chocolate over these. Yummy!!
