Level: Easy
Total: 1 hr 30 min
Active: 25 min
Yield: 2 1/2 dozen cookies

Ingredients

  1. 2 sticks salted butter
  2. 1 cup light brown sugar
  3. 1 cup granulated sugar
  4. 1/4 cup honey
  5. 2 large eggs, at room temperature
  6. 2 teaspoons vanilla extract
  7. 3 1/4 cups all-purpose flour
  8. 1 1/2 teaspoons baking soda
  9. Flakey sea salt, for topping
  10. Creamy Honey Dip, recipe follows
  11. Sprinkles, for topping cookies
  12. 1 cup whole milk Greek yogurt
  13. 2 tablespoons honey, plus additional for drizzling
  14. 1/2 teaspoon pumpkin pie spice

Instructions

  1. Place the butter in a pot over medium heat. Once melted, reduce the heat to low and allow the butter to just barely simmer. Cook until the milk solids that sink are golden brown, about 6 minutes. Set aside to cool until the butter is still liquid, but not hot.
  2. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  3. Combine the brown butter, sugars and honey in a stand mixer fitted with the paddle attachment. Beat on low speed until combined and a homogenous mixture is formed, about 2 minutes. (The mixture will look grainy.) Add the eggs one at a time, beating after each addition, until incorporated. Add the vanilla.
  4. Whisk together the flour and baking soda in a small mixing bowl. Add the flour mixture to the sugar mixture and beat just until incorporated, scraping down the sides and bottom of the bowl as needed.
  5. Using a small scooper, scoop 1 1/2-tablespoon mounds onto the prepared baking sheets, being sure to leave distance in between the cookies. Sprinkle with flakey salt.
  6. Bake until deeply golden brown, about 15 minutes. Allow the cookies to rest on the baking sheets for 3 minutes. Move to a cooling rack to cool completely. Dip cookies in Creamy Honey Dip, then top with sprinkles.
  7. Whisk together the yogurt, honey and spice in a small mixing bowl. Scrape into a serving ramekin. Drizzle with more honey. Serve alongside the cookies.

These are my new absolute favorite cookies!! I followed the recipe exactly and the cookies came out scrumptious. I’m pacing myself on how often to make them because once they are made I can’t stay. away from them.  Thank you Tricia!

I made these this morning, went exactly by the recipe and they were amazing! The brown butter did take longer than 6 minutes, but I think I didn’t have the heat on high enough. The recipe made 3 1/2 dozen cookies using the small 1 1/2 TBS scoop. I only baked for 13 minutes and they came out perfectly.
And I noticed the person below who only gave it 1 star did not leave a comment. Ignore that review.

Very yummy and easy to make! I sometimes add oats and some salt on top and make them “oatmeal salted sugar” cookies too!

I’ve made these several times and they are very good!

Excellent cookies! I added the glaze right on top right out of the oven and it added an excellent texture! Chewy and crispy and not too sweet! I will definitely be making again!

These cookies have the best texture! Chewy and soft!!  The sprinkle of sea salt makes these sweet cookies pop.  They truly are delicious.  I made these for a Rosh Hashahah party highlighting the honey of the holiday.

SO GOOD!! I didn’t have the salt or the dip but boy let me tell you what these are delicious! Mine were so chewy not crunchy like her video seemed. I took some to work and they were gone by the end of the day. I will be looking for excuses to make these. I think they would be perfect for an ice cream cookie sandwich!
