Ingredients
- 3 large egg whites
- 1/2 cup sugar
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 14-ounce package sweetened shredded coconut
Instructions
- Preheat the oven to 325 degrees F and line a baking sheet with parchment paper. Whisk the egg whites, sugar, salt and vanilla in a large bowl until combined; fold in the coconut.
- Scoop heaping tablespoonfuls of the coconut mixture about 1 inch apart onto the baking sheet. Use your fingers to form into pyramids. Bake until golden brown around the edges, 20 to 25 minutes. Let cool 10 minutes on the baking sheet, then transfer to a rack to cool completely.

These are fabulous! Quick and easy to make. Just delicious. (I didn’t make pyramids, I just made plops. Worked great. Gather up any stray strands of coconut – push them into the nearest plop – the wayward strands will burn.
My first attempt at this favorite treat. Fast and easy recipe yielding exactly what I was looking for. Macaroons that stay mounded and didn’t spread. They are not too sweet which makes them very coconut forward with sweetness that enhanced rather than detracted as I felt the recipes with sweetened condensed milk might do. I dipped a couple half way into bittersweet chocolate but took advice from other reviewers and dipped only the bottom on the rest, ensuring some chocolatey goodness in most bites. I will make this again. Enjoy!
I had never made macaroons before , tried at Christmas and made multiple batches to give. Had requests for them as well. Going to make for Easter also. I dipped bottom in chocolate and would like to try to add a flavor as well this time. Loved these!
So easy to make. Perfect for my non dairy son in law. They’re rich so one macaroon could satisfy. My batch made about 23 but I think mine are on the larger side. The tip about wet hands to form the balls was a good one.
