Jalapeno Cranberry Sauce

Ingredients

  1. 1 cup granulated sugar, plus more if needed
  2. 1 tablespoon grated fresh ginger
  3. 1 to 2 jalapenos, seeds and ribs removed, diced
  4. Grated zest and juice of 1 large orange (about 1/2 cup juice)
  5. 1 12-ounce bag fresh cranberries
  6. Grated zest of 1 lemon, plus 1 tablespoon fresh lemon juice
  7. Kosher salt

Instructions

  1. Combine the sugar, ginger, jalapenos, orange zest and orange juice. In a medium saucepan over medium heat. Bring to a simmer and cook 2 minutes. Add the cranberries and cook until they pop, 10 to 20 minutes, stirring frequently and adding water if the mixture appears too dry.
  2. Stir in the lemon zest and juice and season with salt or a bit more sugar. Let cool completely.
