French Onion Chicken Noodle Casserole

This creamy and crunchy casserole brings together the flavors and textures of two soup favorites—French onion and chicken noodle.

Ingredients

  1. 8 tablespoons (1 stick) unsalted butter
  2. 3 large yellow onions, thinly sliced
  3. Kosher salt and freshly ground black pepper
  4. 2 tablespoons fresh thyme leaves
  5. 6 ounces wide egg noodles
  6. 1/2 cup sour cream
  7. One 8-ounce package cream cheese, at room temperature, cut into chunks
  8. 1 cup grated Gruyere cheese
  9. 2 cups shredded skinless rotisserie chicken
  10. 1 cup crispy fried onions, such as French’s
  11. 1/2 cup plain breadcrumbs

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Melt 3 tablespoons butter in a large skillet over medium-high heat. Add the onions and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper and cook, stirring occasionally, until the onions are very soft and just begin to brown, about 20 minutes. Add 1 tablespoon thyme and cook for an additional minute. Set aside.
  3. Meanwhile, bring a large pot of salted water to a boil. Cook the noodles according to the package directions. Reserve 1/2 cup of the pasta water. Drain the noodles and return them to the pot.
  4. While the noodles are still warm, add the cooked onions, sour cream, cream cheese, reserved pasta water and 1/2 cup Gruyere. Stir until the sauce is smooth and creamy and coats the noodles. Fold in the chicken. Season with salt and pepper. Transfer to a 2-quart baking dish.
  5. Microwave the remaining 5 tablespoons butter in a medium microwave-safe bowl until melted. Add the fried onions, breadcrumbs, remaining 1/2 cup Gruyere and 1 tablespoon thyme to the butter and toss until the breadcrumbs are coated. Sprinkle the buttered breadcrumb mixture evenly over the noodles to cover completely.
  6. Bake until the topping is golden brown, 35 to 40 minutes.

It’s a super rich dish, so I served small portions with a salad on the side. I would recommend using 9-10. oz of dry noodles instead of just 6. It’s really quite good but definitely not diet food! Haha!

Very rich and so so so oniony but I loved it anyway. I only used 1 large white onion bc 3 seemed like waaay too many considering that this recipe also has fried onions. I felt like I spent a full day reaping an onion crop in the fields and this was an affordable meal that I could make for my little onion farming family. So yeah, lot of onion but it was so good, no denying that. This would have to be a rare treat. Like very rare because I think it might be 3x your daily caloric intake or at least mine. I also subbed 5 oz boursin with 3 oz of cream cheese and sometimes did a half tbsp of freeze dried thyme. Yes, very “indulgent” as another reviewer stated and not that speedy to make.

Made this tonight and it’s getting rave reviews! Pretty indulgent, so it won’t be a frequent dinner, but definitely craveable! I did make a few of my own minor tweaks (used 8oz of pasta instead of 6oz, added a little white wine to the onions toward the end of their caramelization, added a bit more sour cream and a little milk to make it more saucy and to account for the add’l noodles), but suspect the recipe would be just as good if I hadn’t. Most recipes for “French Onion Casserole” call for the addition of store bought French onion dip. Hey, not gonna judge if that’s your thing (probably wouldn’t be terrible), but this recipe with “whole” ingredients like sour cream, cream cheese, and fresh thyme is just the better, more high quality route! VERY TASTY… WILL make again!!

I don’t see the nutritional information, and I see why. This is so full of fat that I would never think of feeding it to my family!  Maybe I would try if 1/2 the cheese is used and no topping.
