Clams Casino is a dish of simple luxury. Clams are the unsung heroes of shellfish, and I’m hoping that this recipe gets you to understand that. By combining this dish with simple instant ramen noodles, another of my favorite comfort foods, you get a dish that is greater than the sum of its parts. I hope you agree.

Ingredients

  1. 4 strips bacon, cut into bite-size pieces
  2. 2 cloves garlic, minced
  3. 2 medium shallots, minced
  4. One 1-inch knob fresh ginger, minced
  5. 1/4 cup Italian flavored breadcrumbs
  6. 3 tablespoons finely grated Parmesan
  7. 2 cups chicken stock
  8. 1/4 cup dry white wine
  9. 1 pound Manila clams, scrubbed
  10. Two 4-ounce packages instant ramen noodles
  11. Fresh basil and red pepper flakes, for garnish, optional

Instructions

  1. In a large saucepan, add the bacon and cook over medium-high heat until the bacon begins to brown, a couple of minutes. Add the garlic, shallots and ginger and cook, stirring occasionally, until the shallots have softened, about 5 minutes.
  2. Use a slotted spoon to transfer half of the bacon mixture to a medium bowl. Add the breadcrumbs and Parmesan to this same bowl. Stir to combine and set aside to use as topping later.
  3. Add the stock and wine to the saute pan with the remaining bacon mixture to deglaze, scraping up any cooked bits stuck to the bottom. Add the clams, then cover and cook until the clams begin to open, about 10 minutes. Push the clams to one side and add the ramen noodles, then cook, stirring occasionally, until tender, about 3 minutes.
  4. Turn the broiler on.
  5. Pour the saucepan components into a 14-inch cast-iron pan and sprinkle the breadcrumb mixture over the top. Broil until the breadcrumbs are golden brown, about 5 minutes. Serve sprinkled with basil and red pepper flakes, if desired.

Great dish! I didn’t even do the broiler step, used panko crumbs, and it was still a good topping. I always have Ramen on hand and this is such a great way to serve clams. The clams are not overpowered by any other flavors and really shine as the star of this delicious dish.

Clams don’t take near 10 minutes to open, more like 3-4.

Not enough room in the large saucepan to correctly cook the ramen. If f I made this again, I would cook the noodles, put them in the cast iron, add clams mixture and bacon topping and then broil. Flavors are excellent!

Fantastic recipe, easy to prepare, and was a big hit with my family. I added half a can of cannellini beans with the ramen to make it heartier as an entree. This will be on regular rotation at my house!
