Chocolate Bread Pudding

Ingredients

  1. 2 1/2 cups cut-up stale bread
  2. 1 teaspoon vanilla
  3. 2 eggs
  4. 2 tablespoons cocoa
  5. 2 cups milk
  6. 1 teaspoon cinnamon
  7. 1/4 cup sugar
  8. 3/4 cup chocolate chips
  9. Salt

Instructions

  1. Preheat oven to 350 degrees. Place bread in a round, buttered, deep dish pie plate. In a medium bowl whisk together eggs, milk, sugar, a dash of salt, vanilla, cocoa, and cinnamon . Add chocolate chips. Pour over bread and gently mix. Let sit for 15 minutes, so bread can absorb mixture. Bake for 30 to 40 minutes until firm but not dry.

This was great made a triple recipe with left over brioche French toast from Panera. Used brown sugar instead of regular. Added one cup of walnuts and about 3/4 cup of dried cranberries. Also used about 4 candy bars cut into small chunks instead of chocolate chips

I was very excited to try this after all of the great reviews; however the recipe fell short of my expectations . The recipe was very easy to follow and required ingredients I already had around the house which is always nice, but the results did not wow me…the pudding required much more cook time than the recipe calls for and when it was complete, it was just okay.

This recipe is really easy and comes out quite tasty. After trying this recipe I would recommend either cutting your bread pieces fairly small or letting them sit in the liquid for longer than 15 minutes. Even so it tastes wonderful.

Since I found this dish I have made it once a week as a special dessert for “date night”. Sometimes I will also make a simple raspberry sauce to go with it, the tart berries pair well with this sweet ooey gooey dessert.

Last night I tried making it in two smaller dishes, I reduced the heat to 325 and they came out great!
